- lime1
- grated garlic2 teaspoons
- grated ginger2 teaspoons
- allspice2 tablespoons
- chili pepper1 tablespoon
- cumin powder1 teaspoon
- nutmeg½ teaspoon
- salt1 teaspoon
- coarsely ground black pepper1 teaspoon
- olive oil2 tablespoons

Cut the lime in half. Squeeze the juice from one half, and cut the remaining half into 4 wedges.

Trim the sinew from the chicken thighs. Butterfly the thickest parts of the chicken breast to open them up.

Grate the onion into a storage bag. Add the remaining marinade ingredients and massage to combine. Add the chicken from step 2 and the drumettes, then massage well. Marinate in the refrigerator for half a day (12 hours).
Note:
If you are sensitive to heat, reduce the chili pepper to ½ tablespoon.

Arrange the chicken from step 3 on a baking sheet lined with parchment paper, and bake in a preheated 400°F (200°C) oven for 30 minutes.
Note:
If you insert a skewer and the juices run clear, it’s done. Serve with ketchup if you like.
