  • boiled lobster1 (400 g)
  • grated cheese1 tablespoon
  • breadcrumbs1 tablespoon
  • parsley2 sprigs

☆White Sauce

  • milk100 ml
  • heavy cream50 ml
  • cake flour2 teaspoons
  • melted salted butter10 g
  • salt and peppera pinch

Remove the meat from the lobster and separate the tomalley. Cut the meat into bite-size pieces. Finely chop the parsley.

Note:

Reserve the shell, as you will use it as the baking dish.

Combine the ingredients marked with ☆ in a bowl and mix well.

Combine the breadcrumbs and grated cheese in a container and mix well.

Heat a frying pan, add the white sauce mixture, and cook over low heat while stirring. When it starts to bubble and thicken, turn off the heat, then add the lobster meat and tomalley, and mix well.

Fill the shells with the white sauce, sprinkle with the cheese-breadcrumb mixture, and bake in a preheated 425°F (220°C) oven for 10 minutes, or until browned. Transfer to a plate and sprinkle with parsley.
