- carrot1 stalk (150 g)
- pasteurized egg2
- sugar50 g
- vegetable oil60 ml
☆ Batter ingredients
- oatmeal120 g
- almond flour30 g
- baking powder5 g
- allspice1 teaspoon
- roasted walnuts5
- raisins30 g
★ Cream
- cream cheese50 g
- powdered sugar20 g

Instructions

Preparation: Bring the cream cheese to room temperature. Line the pan with parchment paper. Preheat the oven to 350°F (180°C).

Process the oatmeal in a food processor until finely ground.

Grate the carrot. Break the walnuts into small pieces by hand.

Put the eggs and sugar in a large bowl and mix well. Gradually add the vegetable oil while mixing, then add the carrot from step 3 and mix. Add the ingredients marked ☆ and mix thoroughly to make the batter.

Pour the batter into the lined pan and level the surface. Bake in the preheated oven at 350°F (180°C) for 10 minutes. Remove the pan from the oven, then make a slit down the center of the cake, then reduce the oven to 340°F (170°C) and bake for about 40 minutes more. Let it cool.
Note:
Insert a skewer into the cake; if no batter sticks to it, it is done.

Put the ingredients marked ★ in a bowl and mix to make the cream.

Spread the cream over the top of the carrot cake.
