- pasteurized egg1
- milk1 tablespoon
- cake flour2 tablespoons
- baking powder¼ teaspoon
- granulated sugar1 tablespoon
- vegetable oil1 teaspoon
- powdered sugarto taste

Preparation: Separate the egg into the yolk and white.

Put the egg yolk and milk in a bowl and mix. Sift in the cake flour and baking powder, then mix to make the batter.

Put the egg white in a bowl and beat it. Add the granulated sugar in 2 batches, then continue beating until stiff peaks form and the meringue becomes glossy.

Add about one-third of the meringue to the batter. Mix well until combined. Add the remaining meringue and fold gently with cutting motions until just combined.

Heat a frying pan, then place it on a damp cloth to lower the temperature. Add the vegetable oil and spread it thinly. Heat the pan over low heat and divide the batter into 2 portions in the pan. Cover and cook for 4 to 5 minutes. Flip, cover again, and cook for another 3 to 4 minutes.
Note:
Do not spread the batter out; add it so it stays mounded and thick.

Serve on a plate, dust with powdered sugar, and drizzle with maple syrup.
