I like piccata because it’s easy, but it still feels like you put in a bit of extra effort. Since I’m pretty lazy, I tried just adding the egg straight into the bag after coating it with cake flour. I kind of squished the bag around and mixed the egg together with the meat, then dumped the whole thing right into the frying pan, haha. I cooked one side as is, then flipped it over, covered it, and turned the heat to low because I was worried about whether it would cook through. Then I just left it alone for a while. Once I checked that it was cooked through, I took the lid off and cooked it over medium-high heat to evaporate the moisture, and it was done! I changed the steps to suit my lazy style, so it might not look especially pretty, but if you don’t mind that, it’s an easy way to make it, haha.

I seasoned it with salt and pepper, squeezed some lemon over it, and packed it in a lunch box. Even though I used chicken breast, it turned out tender and juicy, and both my husband and son loved it.

It was easy and delicious. If you pound the chicken breast with a knife beforehand, it will become even more tender (*^^*).

It was very easy to make, and since I had bought a lot of chicken breast, I also made aonori piccata at the same time ^ ^ I used olive oil. After flipping it over and covering it with a lid, I turned off the heat once and let it cook through with the residual heat, then finished it with slightly higher heat at the end. It was very delicious. I seasoned it fairly well with salt and pepper, so it was tasty even without ketchup.

I made this for the first time! I wasn’t sure what else to do with the skin, so I left it on, and it didn’t cook through lol. It seems like for piccata, it’s better to remove the skin after all. Other than that, it turned out really delicious. I made a ketchup version and a salted version, and I was very satisfied ^_^ I tried making it again later! ↓ The browning was amazing! But you really do have to be careful not to overcook it... it gets tough... It was also delicious with Okinawan salt even without ketchup!

I didn’t have chicken breast, so I used chicken tenderloins instead. They turned out fluffy and delicious. They were also perfect for a bento side dish!
