Romesco sauce is a traditional all-purpose sauce from Catalonia, Spain. It has a sweet-tart flavor and is packed with the delicious taste of vegetables, pairing well not only with roasted vegetables but also with salads, fish, and meat dishes. This version uses tomato purée instead of fresh tomatoes, making it easier to prepare.
Ingredients [ Makes about 200 g ]
- red bell pepper1 (150 g)
- garlic4 cloves
- tomato purée50 g
- roasted almonds30 g
- olive oil100 ml
- red wine vinegar½ tablespoon
- paprika powder2 teaspoons
- salt½ teaspoon
- sliced chili peppera pinch

Preheat the oven to 450°F (230°C).

Cut the red bell pepper in half lengthwise, remove the stem and seeds, then cut it in half lengthwise again.

Wrap the garlic in aluminum foil with the skin on. Line a baking sheet with parchment paper, place the red bell pepper on it skin-side up, and add the foil-wrapped garlic. Bake in the preheated 450°F (230°C) oven for 15 to 20 minutes, until the pepper skin is blackened. Let cool slightly, then peel the garlic and remove the charred skin and thin outer skin from the pepper.

Put all the ingredients in a food processor and blend until smooth.
