Here’s a tomato sauce made with fresh tomatoes. It’s light yet packed with rich tomato flavor. Use it in many ways, such as for sautéed meat or fish, pasta, or bread!

Ingredients [ Makes about 250 g ]

  • tomato2 (400 g)
  • onion½ (100 g)
  • garlic1 clove
  • olive oil1 tablespoon

☆ Seasonings

  • sake2 tablespoons
  • sugar½ teaspoon
  • salt⅓ teaspoon
  • black peppera pinch
  • granulated bouillon (consommé)⅓ teaspoon
  • bay leaf1

Remove the stems from the tomatoes and score a shallow X on the opposite end. Finely chop the onion. Cut the garlic in half, remove the germ, and mince it.

Bring a pot of water to a boil. Place a tomato on a ladle and dip it into the hot water for about 20 seconds. When the skin starts to peel back, remove the tomato from the hot water. Transfer it to cold water, peel it, and cut it into 1 cm cubes.

Add the olive oil and garlic to a pot and heat over medium heat. When fragrant, add the onion and sauté until softened. Add the tomatoes and the seasonings marked ☆. Once it comes to a boil, cover and simmer over low heat for about 10 minutes.

Remove the lid and cook over medium heat for about 5 minutes, stirring, until reduced.
