Finely chop the onion, green pepper, and garlic. Cut the tomatoes into 1 cm cubes.
Note:
Remove the onion root end, the garlic germ, and the tomato stems.

Put the olive oil and garlic in a skillet and heat over low heat. When fragrant, add the onion and green pepper, and stir-fry over medium heat until the onion softens. Add the tomatoes and seasonings, mix, and simmer until reduced for about 8 minutes.

It was easy to make and absolutely delicious!! The ethnic aroma of the spices made it feel like I was dining at an international restaurant, and I was very satisfied. I’ll definitely make it again!! Next time, I think it might be even better with a little ichimi chili pepper for some heat, or served with naan! Highly recommended!!! (P.S.) As of December 2022, I’ve already made it 30 times! It was easier to make and tasted better than making spice curry! I made it without canned tomatoes or paprika, and with only half the specified amount of garlic, but I kind of regret not using the full amount. Even so, it’s the kind of recipe that keeps giving you ideas—maybe I’ll add ground meat next time, or put it on bread and toast it, or make a big batch and freeze it in small portions for convenience.
