  • beef sirloin steak300 g
  • shimeji mushrooms1 pack (100 g)
  • king oyster mushroom (eringi)1 (40 g)
  • garlic1 clove
  • salt and peppera pinch
  • vegetable oil1 tablespoon

  • soy sauce1 ½ tablespoons
  • salted butter10 g

Let the beef sit at room temperature for about 30 minutes. Season with salt and pepper.

Trim off the base of the shimeji and separate into small clusters. Cut the king oyster mushrooms in half lengthwise, then cut them crosswise in half and slice thinly. Slice the garlic thinly and remove the germ.

Heat the vegetable oil in a frying pan. Add the beef and cook over medium heat for 2 minutes. Flip and cook for 2 minutes more. Remove the beef, wrap it in aluminum foil, and let it rest for about 10 minutes. Cut into bite-size pieces.

Reheat the same frying pan. Add the garlic, shimeji, and king oyster mushrooms, and sauté over medium-low heat until softened. Add the seasonings marked with ☆ and simmer until the moisture has evaporated to make the mushroom sauce.

Plate the beef and spoon the mushroom sauce over it. Serve with watercress.
