Cut the butter into 2 cm cubes.

Put the sugar in a saucepan and heat over medium heat, gently swirling the pan as it melts. When it turns amber, turn off the heat, add the butter, and stir until melted. Gradually add the heavy cream while stirring. Return to medium heat and warm just until it is about to boil, then turn off the heat, add the salt, and mix.

Note:

Take the heavy cream out of the refrigerator about 15 minutes before using it. Be careful, as it may splatter when you add it. If the sauce becomes too firm, warm it slightly to loosen it.
