Poke is a classic Hawaiian dish made by marinating small pieces of fish in seasonings. In Hawaii, it is often made with lean tuna or octopus, but this version uses salmon, a popular choice, instead! The addictive flavor of sesame oil and garlic makes it great served over rice or as an appetizer.

Instructions
1
Cut the avocado lengthwise through the center, then score all the way around along the pit. Twist the two halves in opposite directions to separate them. Remove the pit and peel off the skin by hand. Cut into 2 cm cubes.
Note:
Holding it on top of a towel makes it easier to handle.
2
Pat the salmon dry with paper towels and cut it into 2 cm cubes.
3
Add the ingredients marked with ☆ to a bowl and mix. Add the salmon and toss to coat. Add the avocado and mix gently so it does not fall apart, then let it sit until the flavors blend.
Note:
Mixing with a large spoon helps keep the avocado from breaking apart. Marinate for about 10 minutes for deeper flavor.
