Instructions
1
<Prep> Chill the parfait glasses well in the freezer. Using an ice cream scoop or similar tool, form the ice cream into 2 round scoops, place them on a tray, and chill well in the freezer.
Note:
You can also shape the ice cream into round scoops with a spoon.
2
Remove the stems from the strawberries and cut them lengthwise into 3 equal pieces.
3
Put the heavy cream and sugar in a bowl and whip with a hand mixer until soft peaks form to make the whipped cream. Transfer to a piping bag.
4
Put 1 tbsp strawberry jam into a parfait glass, and press 8 slices of the strawberries from step 2 against the inside of the glass so the cut sides show. Add 2 tbsp cornflakes in the center, then pipe in one-fourth of the whipped cream. Repeat once more. Top with 1 scoop of ice cream, add 8 strawberry slices, and garnish with mint. Make 2 parfaits total in the same way.
Note:
For the strawberries placed against the inside of the glass, start with the center slice from each strawberry cut into thirds. Using the side slices for the topping next to the ice cream will give the parfait a cuter finish.

The recipe was easy to follow, so I was able to make it almost exactly as written 🩷 Thank you very much 🙇 I couldn’t get mint, so I used Italian parsley as a garnish. So after scooping out the ice cream with a disher, you chill it in the freezer first. It was delicious.
