Instructions

1

Cut the bacon into 1 cm pieces.

Note:

You can also make this with sausage instead of bacon. Try adapting it with your favorite ingredients.

2

Cut the cabbage into bite-size pieces, about 2 cm squares. Dice the potato, carrot, and onion into 1 cm cubes. Soak the potato in water, then drain well.

3

Heat the olive oil in a pot. Add the bacon and onion, and cook over medium heat until the onion turns translucent and fragrant. Add the potato, carrot, and cabbage, and stir-fry briefly.

4

Add the seasonings and canned diced tomatoes to the pot from step 3, and mix lightly. Once it comes to a boil, cover and simmer over low heat for 5 to 7 minutes. Serve in bowls and sprinkle with parsley.

It turned out really delicious and packed with vegetables! As for the potatoes and carrots... it took too long for them to soften just by stir-frying, so next time I think I’ll microwave them for 3–5 minutes first.

It’s super easy since all you do is chop and simmer—nothing complicated at all! I think the carrots might have cooked through better if I had microwaved them first before adding them. You can also stir in 2 tablespoons of cake flour to thicken it, or pour it over tofu and top with cheese for a gratin-style variation, so there are lots of ways to enjoy it. I make a big batch ahead when I’m busy!

I used napa cabbage instead of regular cabbage, and it turned out really delicious! I’ll definitely make it again!

The seasoning was simple. I doubled the amount and made plenty. This was delicious. I microwaved the carrots at 500 watts for 2 minutes before adding them. I simmered it for 10 minutes.

It was a very delicious minestrone♪ It was even tastier with grated Parmesan cheese on top♪

I swapped the bacon for wiener sausages! It turned out a bit too tangy, so I added 1/2 tablespoon of ketchup at the end! I feel like it made it milder and added more depth 🐱!

It tastes better with bacon, but I made it with only vegetables so I could eat it after detoxing or training. This time, I used fresh tomatoes, so the acidity really came through and it was delicious. Thank you for the recipe!

I love minestrone, so I gave this a try! It turned out incredibly delicious (^^) It was ready in no time—about 3 minutes in the pressure cooker! It seems really perfect for winter! I also added a little extra consommé. I used black pepper instead of parsley ^ - ^
