Put the bread flour and dry yeast in a bowl and mix well. Add the salt and water, then stir with a wooden spoon for about 5 minutes to make the dough. Cover with plastic wrap and let rest at room temperature for about 30 minutes.

Note:

Since this is a high-hydration, soft dough, knead it in the bowl.

Remove the plastic wrap. Using a dough scraper, gently twist and fold the dough from the edges of the bowl toward the center. Cover again and let rest at room temperature for about 30 minutes.

Knead again in the same way as in step 2. Cover with plastic wrap and let rest at room temperature for about 1 hour.

Dust the dough from step 3 with additional bread flour (not included in the ingredient list: as needed), then use a dough scraper to loosen the dough from the sides of the bowl. Transfer it to a work surface and dust again with flour.

Gently flatten the dough into a round while pressing out the gas with your hands. Fold the top and bottom toward the center in thirds. Fold the left and right sides in the same way, then turn the dough over.

Gently stretch the dough into a rectangle about 15 x 20 cm, then cut it into 3 equal pieces with a bench scraper. Place them evenly spaced on a baking sheet lined with parchment paper.

Dust the dough with flour for dusting, cover with plastic wrap, and let rest for about 20 minutes.

Note:

Preheat the oven to 475°F (240°C).

Make 1 slash on the surface of each piece of dough, then mist evenly with water (not included in ingredient list: as needed).

Note:

Misting the dough helps the surface bake up crisp.

Bake in the preheated oven at 475°F (240°C) for 15 minutes.
