Cut the onion into ¼ inch (5 to 7 mm) pieces. Trim off the base of the shimeji mushrooms and separate them by hand. Mince the garlic.

Cut the bacon into ½ inch (1 cm) pieces.

Quickly rinse the cooked rice in water and remove the surface starch.
