- pork shoulder block500 g
- Japanese long green onion (naganegi), green part1 stalk
- ginger1 knob
- garlic1 clove
- vegetable oil½ tablespoon
☆ Seasonings
- sugar2 tablespoons
- sake50 ml
- soy sauce100 ml
- water300 ml

Slice the ginger thinly. Cut the garlic cloves in half lengthwise and remove the cores.

Tie the pork tightly all over with kitchen twine.

Heat the vegetable oil in a pot over medium heat. Add the pork from step 2 and cook for about 8 minutes, turning it as it cooks, until browned all over.

Add the seasonings marked ☆, the green onion, ginger, and garlic, and bring to a boil over medium heat. Cover and simmer over low heat for about 30 minutes. Turn the pork over, cover again, and simmer over low heat for 20 minutes more. Let the pork cool slightly with the lid on — this is the chashu.

Remove the chashu, take off the kitchen twine, and cut into easy-to-eat slices.
Note:
Reserve the cooking liquid.

Arrange the chashu on a plate and spoon the cooking liquid over it.
