Bananas are best stored at room temperature rather than in the refrigerator, since they're prone to chilling injury. That said, depending on how you plan to use them, freezing is a great way to make them last longer. Here, we’ll show you two methods: freezing them after cutting and freezing them as a paste. Use lemon juice to help prevent them from turning completely black. Fully ripe bananas are recommended. Put frozen bananas to good use in your everyday cooking.

[For freezing in pieces] Peel the bananas and cut them into easy-to-use pieces. Drizzle with lemon juice and lightly drain off any excess moisture. Divide into portions and wrap each in plastic wrap. Place in a freezer bag, press out the air, and store in the freezer.
Note:
Check that the storage bag is suitable for freezer temperatures. Enjoy them frozen or partially thawed. Coat the entire surface of the bananas with lemon juice. Adjust the amount of lemon juice as needed depending on how many bananas you are freezing.

[For freezing as a paste] Put the bananas and lemon juice into a freezer bag, press out the air, and seal the bag. Mash from the outside of the bag and flatten it. Place on a tray and store in the freezer.
Note:
Partially thaw and mix into yogurt or ice cream, or use in a smoothie. Freeze on a tray so they freeze more quickly.
